Kitchen Adventures 1

Aside from being Mommy one of my favorite parts of being a SAHM is getting to play in the kitchen. One of my passions in life is cooking; especially cooking for other people. I love to be creative, and I rarely follow a recipe twice (unless of course you are talking about baking...then it's imperative!) My family endures my many trial run dinners....and they live.

So anyhow, I thought..Hey I am always on the lookout for yummy, but quick meals. So I thought I would share some of my recent goodies (obviously the ones that turned out well).....I feel like I am going out on a limb...so be nice! Please remember that I usually just start tossing stuff in to the pot, so my measurements are approximate

Pineapple Chicken (this was tonight's dinner)

1 small can of crushed pineapple
1 Tbs crushed garlic (I use the jarred minced garlic)
2 Tbs soy sauce ( I used low sodium)
3-4 chicken breasts
1 tsp of olive oil (I used extra virgin)

In a blender combine the pineapple, garlic, and soy sauce. Puree for about a minute or until well blended.
Heat oil in a large skillet. Add chicken. Pour pineapple mixture over chicken. Cook for approximately 5 minutes, and turn. Continue to cook the chicken until juices run clear.

I lowered the cooking temperature so that the chicken would absorb more of the pineapple mixture. It took about 25 minutes to cook on low heat.

I served this with fried rice, black eyed peas, and California mix.



















Last week I made pork chops (that actually inspired tonight's meal).

Peach Spice Pork Chops
1 can sliced peaches, drained (in their own juice)
3 tbs All Spice
3-4 pork chops

In a blender mix the peaches and All Spice. Puree until well mixed (it will be a brownish color). Pour into a ziplock baggie and add pork chops. Marinate for 4 or more hours.
Preheat grill to desired temperature (I used a med-high flame). Cook until juices run clear.

I served this with cinnamon apples, mixed green salad, and whole wheat rolls.
